The Extensograph is a dough analysis instrument that allows determining its stretching and resistance parameters at different stages of fermentation. These characteristics directly affect the properties of flour and the quality of baked goods. Accurate measurement of these parameters is important for raw material quality control and proper use of additives and oxidizers, ensuring the dough has optimal consistency and elasticity.
The operating principle is simple: each dough sample weighing 150 grams is placed in the instrument and stretched during fermentation. Measurements are taken at 45, 90, and 135 minutes, recording the dough’s response to stretching.
The instrument and hooks are controlled via a touch screen, while the built-in software automatically calculates results and generates graphs, which can be saved for analysis or reporting.
