CropLab Falling Number Tester

The CropLab Falling Number Tester is a professional analyser for determining the falling number using the Hagberg-Pertten method. It is used to assess the activity of α-amylase in grain and flour, enabling the determination of germination potential and the processing suitability of raw materials. How it works

A flour suspension in a boiling water bath undergoes gelatinisation. The activity of α-amylase determines the degree of starch gelatinisation and the speed at which the stirrer shaft descends.

  • Low fall number → high enzyme activity
